It’s super simple to make yet it tastes complex. Of course we are not using sweetened soy milk. Use unsweetened soy milk from the chiller.. add water and salt (sake & mirin optional)…

Umami-Rich Soy Milk Hotpot

Serves: 2 litres of soup base
Ingredients
- 1 litre unsweetened soy milk
- 1 litre water
- 6 teaspoon salt (depends on individual preference)
- 7.5 tablespoons of sake
- 7.5 tablespoons of mirin
Instructions
- Add all the ingredients into a large stock pot and boil over medium heat (pot to be able to hold at least 3 litres of water)
- Serve as hotpot soup base
