Umami-Rich Soy Milk Hotpot

Serves: 2 litres of soup base
  • 1 litre unsweetened soy milk
  • 1 litre water
  • 6 teaspoon salt (depends on individual preference)
  • 7.5 tablespoons of sake
  • 7.5 tablespoons of mirin
  1. Add all the ingredients into a large stock pot and boil over medium heat (pot to be able to hold at least 3 litres of water)
  2. Serve as hotpot soup base
