Pommes Aligot is a dish from the Southern France made from mashed potatoes, garlic and lots of stretchy cheese. This combination makes a boring mashed potatoes extremely gooey, velvety and addictive.
A wise man once said, once you had Aligot, you will never go back to eating mashed potatoes again. Well… I forget who is the wise man but I totally agree!

Making this dish is really very simple. You can make the mashed potato from scratch like in this recipe. Or, you can buy instant mashed potato powder and follow the instructions as per the packaging until you get the “mashed potato”. *Mashed potato powder + water will be 500g. Then start to follow this recipe from the part where it started adding other ingredients and seasoning.
Boil the potatoes in a pot of water and 1 teaspoon of salt.
You can opt to boil the potatoes with skin on. I peeled the potato skins because the one I used were the unwashed ones and I’m just lazy to wash it until it is really cleaned.
After the potatos softened, about 20 mins, remove the potatoes from the pot and pass the potatoes through a strainer
You do not need to remove the skin if you did not peel before boiling. The skin of the potatoes will remain in the strainer.
You will get a super fine and smooth mashed potatoes using this method
Add cubed butter and stir into the still warmed mashed potatoes until the butter incorporated into the mashed potatoes.
Set aside
Warm cream and chopped garlic in a pot.
Add in the mashed pototoes and cheese
Stir and mix until the cheese melted.
Add Salt and pepper. *Salt might be omited as some of the cheese used might be already very salty. Please taste before adding salt.
Serve hot. *As cheese will harden when cool, same for this cheesy Aligot. Anyway it will sure be gone before it cools down.
- 500g Starchy Potatoes (eg, Russet, Yukon)
- About 1 litres of Water (Enough water to submerge the potatoes and boil until soften)
- 1 teaspoon Salt
- 500g Mashed Potato
- 50g Butter (Cubed)
- 125g Cheddar (Shredded or Cubed)
- 125g Mozzarella Cheese (Shredded or Cubed)
- 200 ml Cream
- 1 tablespoon Chopped Garlic
- Salt & Pepper to taste
- Parsley or Chives
- Add the potatoes and water in a pot and bring it to boil under medium high heat
- When boil, lower down to medium low heat and continue to cook until the potatoes soften and become mashable, about 20 minutes
- Mash the potatoes by passing through a strainer
- Add cubed butter into the mashed potato and stir until butter melted
- Warm the cream and garlic in a saucepan under medium low heat
- Add in the mashed potatoes and cheese
- Stir until cheese melted
- Add salt, if necessary, and pepper
- Garnish with Chives or Pasley and serve hot
Serve hot. *As cheese will harden when cool, same for this cheesy Aligot. Anyway it will sure be gone before it cools down.
