The French Mashed Potato with A Cheesy Twist (Pommes Aligot)
Serves: 4 pax as a side
Boil the Potatoes
  • 500g Starchy Potatoes (eg, Russet, Yukon)
  • About 1 litres of Water (Enough water to submerge the potatoes and boil until soften)
  • 1 teaspoon Salt
The Addictive Cheesy Mashed Potato
  • 500g Mashed Potato
  • 50g Butter (Cubed)
  • 125g Cheddar (Shredded or Cubed)
  • 125g Mozzarella Cheese (Shredded or Cubed)
  • 200 ml Cream
  • 1 tablespoon Chopped Garlic
  • Salt & Pepper to taste
  • Parsley or Chives
Boiling the Potatoes
  1. Add the potatoes and water in a pot and bring it to boil under medium high heat
  2. When boil, lower down to medium low heat and continue to cook until the potatoes soften and become mashable, about 20 minutes
Mash the potatoes
  1. Mash the potatoes by passing through a strainer
  2. Add cubed butter into the mashed potato and stir until butter melted
The Aligot
  1. Warm the cream and garlic in a saucepan under medium low heat
  2. Add in the mashed potatoes and cheese
  3. Stir until cheese melted
  4. Add salt, if necessary, and pepper
  1. Garnish with Chives or Pasley and serve hot
Add Salt and pepper. *Salt might be omited as some of the cheese used might be already very salty. Please taste before adding salt.
Serve hot. *As cheese will harden when cool, same for this cheesy Aligot. Anyway it will sure be gone before it cools down.
