Steak Sauce – Steak Hollandaise


This sauce elevated the classic hollandaise by adding hint of umami-ness from soy sauce and pan dripping reserved from  the searing of the steaks

Simmer a pot of water over medium low heat

Add 2 egg yolks and 1 tablespoon of water in a heat proof mixing bowl


Bring it over to the pot of simmering water and whisk it over the pot of simmering water (ensure that the water is not touching the bottom of the mixing bowl)


Whisk vigourously until the egg yolk thicken to your desired consistency (it should be thick)


Add Butter and beef drippings and continue to whisk vigorously over the simmering water until butter and fats incorporated into the yolk mixture


Add in soy sauce and worcestershire sauce and whisk until well combine


Remove from heat and serve on the side with steak or drizzle sauce over steak

  • 1 to 2 tablespoons Reserved Beef Drippings from Pan fryed steaks
