Sounds weird? Surprisingly it’s not! I was skeptical about soy milk as soup base at first. However, after the first sip, I’m sold!
It’s super simple to make yet it tastes complex. Of course we are not using sweetened soy milk. Use unsweetened soy milk from the chiller.. add water and salt (sake & mirin optional)…
TaDA~ you will have a pot of rich and tasty soup base within 1 min!
- 1 litre unsweetened soy milk
- 1 litre water
- 6 teaspoon salt (depends on individual preference)
- 7.5 tablespoons of sake
- 7.5 tablespoons of mirin
- Add all the ingredients into a large stock pot and boil over medium heat (pot to be able to hold at least 3 litres of water)
- Serve as hotpot soup base
